Malt Master Dr Craig Wilson hand selected whisky from three different cask types - refill, Pedro Ximenez Oloroso seasoned and first fill ex-bourbon - until he found just the right recipe for this effortlessly delightful dram. The Tomatin 12-Year-Old is classically smooth, having been matured in traditional Scotch Whisky, ex-Bourbon and ex-Spanish Sherry casks. Aromas of wild heather, pine and cedar soon sweeten to reveal notes of crème caramel with apples, pears and mango before a full-bodied and buttery finish, the 12-year-old is a distinguished sherry cask whisky with a little something different.

The Tomatin 14-Year-Old is soft, smooth and sweet, benefiting from its time spent in Tawny Port casks which previously held port for around 50 years. Rich but balanced aromas of red berries, sweet honey and rich toffee develop into aspects of light fruits and nuts on the palate and an abiding finish of smooth fruit salad.

When Tomatin Distillery was established in 1897, the isolated and idyllic setting of Tomatin was almost perfect. However there wasn't a local workforce; the local inhabitants were scattered shepherds and cattle drovers. The company began a project of construction to accommodate its workforce. Since that time the distillery has been at the heart of the community and the community at the heart of the distillery. This legacy has continued and Tomatin remains one of the few distilleries to provide a home for its dedicated craftsmen. Time in Bourbon barrels and Virgin Oak casks brings a light sweetness to The Tomatin Legacy, a non-peaty scotch which boasts aromas of vanilla bean, white chocolate and cinnamon. On the palate gentle waves of fresh fruit peppered with ginger emerge ahead of a light, clean finish.

Tullamore DEW 12 Year Old Special Reserve Like Tullamore D.E.W. Original, Tullamore D.E.W. 12yo Special Reserve is a triple distilled blend of all three types of Irish whiskey. However, it has a high proportion of pot still and malt whiskeys, matured in a combination of bourbon and sherry casks, for 12 to 15 years.

Triple distilled and patiently aged in a combination of ex-bourbon and sherry casks, this original blended Irish whiskey is known the world over for its smooth and gentle complexity. Tasting Notes: The early floral yet biscuit flavour reflects the grain whiskey, while the soft spicy notes can be attributed to the pot still whiskey in the blend. The citrus flavour is complemented by the malt. Finally notice the nutty or even marzipan note combined with distinctive vanilla in the finish - imparted by the sherry and bourbon casks used in maturation.
